If we focus on the olfactory properties, the Perfume Academy defines the strawberry aroma as “fruity, green and refreshing.” Miguel Bartolomé notes that it is characterized by a bright and acidic finish (it prevents it from being cloying), although it is also capable of evolving towards a floral nuance. “It is an incredibly versatile note, with a complex and rich olfactory profile capable of presenting everything from a caramel sweetness to slightly acidic and green nuances,” he adds. It is important to note that, until recently, “the strawberry note did not exist in nature as a perfume raw material (extracting a stable essential oil directly from fresh strawberry is very difficult) and had to be reproduced by synthetic molecules and biochemistry“explains Miguel Bartolomé. But the game has changed and is now possible thanks to the use of by-products derived from juice production.
